Acidity Acidity measures the percentage of free fatty acids in olive oil, indicating the oil's chemical quality and freshness. Extra virgin olive oil must contain less than 0.8% acidity, whilst top-quality oils often measure below 0.5%. Lower acidity levels signal that olives were healthy at harvest, processed quickly after picking, and handled carefully throughout production. High acidity typically results from damaged fruit, delayed processing, or poor storage conditions.
